Title: White Bean Dip with Fresh Ginger & Lime

Yield: 1 Batch

3cCooked white or navy beans OR-
2cnDrained rinsed beans
1tbOlive oil
  Zest and juice of 1 lime
2 Garlic cloves, peeled and minced
1 1" piece fresh ginger root, peeled and minced
2 Green onions, minced
 dsHot sauce
1/4tsSalt
3tbChopped cilantro

In a blender or food processor, process the beans, olive oil, lime zest and juice, garlic, minced ginger, green onions, hot sauce and salt until smooth. Transfer to a medium bowl and add chopped cilantro. Serve either chilled or at room temperature.

Delicious with raw vegetables, crackers, or as a spread for crusty whole wheat bread.
